The historical use of millets in Tamil Nadu dates back to the Sangam era (300 BCE–300 CE), where they were staple cereals alongside rice. Millets like foxtail, little, and kodo were resilient to arid conditions, making them ideal for dry farming, while rice required wetland cultivation. Sangam literature highlights diverse cooking methods and dietary practices, including millet-based dishes and recipes combining rice with millets. Over time, rice gained prominence due to irrigation advancements by dynasties like the Pallavas and Cholas, who built tanks and canals to support wetland farming. However, the Green Revolution (1960–70) shifted agricultural focus toward high-yield varieties of rice and wheat, leading to a decline in millet cultivation and consumption. Despite their nutritional superiority—higher fiber and nutrient content compared to polished rice—millet production dropped by 47–83% over five decades. Recent efforts, driven by health awareness and the "Millet Movement," aim to revive millets through culinary innovation and promote their climate resilience and nutritional benefits. This resurgence reflects a broader shift in Tamil Nadu’s eating patterns, balancing historical dietary traditions with modern health consciousness.
